Well, more like balls. These power clusters pack a punch of energy that’ll get you through any snack time (or dessert 😉 ) and provide sustained energy release throughout the day. With yummy ingredients dates, almonds, cocoa and coconut, talk about a super power ball! – except this one’s not a gamble!
What you need
About 20 dates, soaked in hot water to remove the pits
1/2 cup of whole oats
1/2 cup of desiccated coconut, plus extra for rolling, toasted gently in a pan on low heat
1/2 cup cocoa
1/3 cup almond/coconut oil
1 dashing splash of vanilla essence
1/2 cup almonds/peanuts/raisins or whatever you fancy
Ruth’s tip: experiment with added cinnamon, ginger, coffee, chilli or honey
So simple, you could daaaaiii daaahling
Place all ingredients in a blender and blitz baby blitz!
Stick the mixture in the fridge for 20-30 mins.
Shape tablespoonfuls into balls between your palms.
Roll about in the toasted coco.
